I don't know what to tell you if you want a healthy non-stick pan, I don't think it exists. I like cast iron from the nicer American vendors.

I believe that the lawsuits are from the earlier versions of their cookware that did indeed have PTFEs. To the best of my knowledge, the new ceramic ones have been tested independently and found to be safe.

Any pan with a chemical coating has the potential to release fumes, esp at high heat, and bird lungs are made up of air sacs with a unidirectional flow- extremely efficient and fixed. Way back in the day when I was learning about this, I was told to consider it in comparison to a “bellows” system.
The upshot really is that they move a good deal more air through quickly and more efficiently, this making them more susceptible more quickly. As a side note, most nursing homes don’t (or didn’t, my info may be dated) use nonstick in nursing homes for similar reasons: the fumes can compromise/kill their elderly patients who may have already compromised breathing.
I do not use the self clean on my oven, I have a borderline antique waffle-maker with no coating, and I will let my husband use an old griddle sheet that has some sort of nonstick on it only sparingly and directly under the highest fan setting in the kitchen (parrots are 2 rooms away with a closed door). I use stainless or cast iron on my stovetop/in my oven.
It may sound silly to some, but I’ve had some of these birds since I was a teenager, and I’m middle-aged now. They have seen me through decades of my life and are precious to me, more so every time I lose a four footed friend, or another human. With proper care, your parrot will be by your side for the better part of your life.
