Leftover corned beef? Make some Reuben soup! Updated with picture :)
I believe my fiancee has absolutely nailed this and, with her permission, am sharing her recipe for others to enjoy
Reuben Soup
Ingredients: 4 tablespoons of butter 1 medium sweet or yellow onion, diced 1 – 2 celery stalks, chopped 1 – 2 cloves of garlic, minced 2 tablespoons flour 2 cups beef stock (or broth) 2 cups cream (can substitute half & half or milk, but won’t be as thick & creamy) Leftover chopped corn beef, at least 2 cups or to taste 14 – 16 ounces sauerkraut 1 to 1 ½ tablespoons prepared horseradish (not horseradish sauce) ½ cup Thousand Island dressing 1 teaspoon Worcestershire sauce 3 to 4 ounces cream cheese (not reduced fat) 8 ounces grated Swiss cheese Salt and pepper to taste
Directions: 1. Melt butter in a Dutch oven over medium heat. 2. Add onion and celery and cook until soft 3. Add garlic and cook 1 minute. 4. Sprinkle flour on top. Stir in and cook for 1 minute. 5. Gradually whisk in beef broth and bring to a simmer. 6. Stir in cream, corned beef, sauerkraut, horseradish, Thousand Island & Worcestershire sauce, until heated through. 7. Turn heat to low and add cream cheese & Swiss cheese. Stir in until incorporated and heated through. 8. Season to taste with salt and pepper. 9. Serve soup with pumpernickel or rye croutons or toast.

Nothing wrong with a good Reuben sandwich either.

Same problem in our house. Now I've got to go get another corned beef to try this recipe out. Hopefully we can resist temptation long enough to make the soup.

The local butcher shop makes a pretty wicked corned beef, so when we look for one we usually get the biggest they have
