Whenever I visit my brother to make burgers and taters for his kids, I tell them I have to season the pan first. I'll make bacon. And more. And more. Slow and crisp. Finally start the taters in real oil after 45 minutes.

Making bacon <properly> is a mindset, a ritual in observance of time and temperature. I'll be teaching my nephew the bacon secrets before long. He will wow his GF in college!
