14 year wedding anniversary. I made some dinner. - And steak cooking discussion
Well, it’s our 14th anniversary. She told me what she wanted and I delivered.
I just want to say I’m super lucky to be married to my best friend.

Crostini with tomato, basil and fresh mozzarella.
Homemade crab cakes.
Homemade chili citrus aioli.
Steak, but I took a couple of rib eye steaks and cut off the cap, and rolled up a cap steak.
I made a Cascabel pepper, onion, bell pepper relish to go with the steaks.
Dessert, we are going to my pop’s house. I made 4 ramekins of homemade Crème Brûlée, which we will share with a couple bottles of wine.
I won’t have pics until later, and I’ll post them tomorrow.

Some of it was luck. So first off, this was a cap steak. I took the best part ofF two rib eyes, trimmed them well, and rolled them together to form a steak. I tied is and that’s how it took on the steak shape.
I have a ribbed cast iron pan that I get so hot I worry that the light coat if oil on it may catch fire. It’s as hot as it’ll get sitting on a high burner for ten minutes. I throw the steak on and turn it a lot. Each time I turn it, it’s going to a new hot 1/4 of the pan.
Where the luck came in was halfway through cooking, the string that tied it together, popped off. So I started turning them as little strips of steak, following the same procedure. Total time in the pan was about 7 minutes or so. Hard to say as I don’t time it, I go by feel when I press on the meat with my thumb. The trick is letting them rest. The steak recasted for at least ten minutes. Had it not rested that long, it would have been very rare in the middle.
