Sig Forum Brain Trust, I'm hoping i seek your culinary wisdom in re-creating one of my mother's / maternal family's recipes that I can't quite duplicate. My late mother (and most of her siblings) grew up in WV (1940s or earlier), which I believe was primarily in the Sutton / Flatwoods area of WV. One of the regular breakfast recipes was tomato gravy (creamed tomatoes), always served over homemade biscuits. I have a general recipe from a family cookbook + what I can find on youtube, but I've found that it just isn't the correct. Per usual, the recipe is just a general guess/estimate of the ingredients. Close, but not correct. My mother's side of the family is close enough to have created a family cookbook + has a family "park" for reunions. Unfortunately, my mother was the youngest of 12, so the majority of my Aunts / Uncles are no longer living. I'm hoping the community here can provide advise / recipes that will make the following recipes correct. My Family's Recipe is: 1 qt tomato juice (or whole tomatoes, chopped). 1 tsp salt 1/4 cup sugar (or to taste) Dash of pepper 4-5 TBS cornstarch (though I recall my mother using flour) 1 cup milk 2 TBS butter Instructions: Put tomato juice in saucepan and bring to boil. Add salt, sugar, and pepper. Take 1/3 of the milk and add cornstarch and mix until smooth. Add the rest of the milk to the cornstarch mixture. Stir into boiling tomato juice. Cook until thickened. Add butter and serve. Great with hot Biscuits. I'll have to search the forum for a good biscuit recipe! | ||
