OK. Recipes for Sweet Potato Casserole? Anyone? Login/Join

Hello,
My wife and I both like sweet potatoes. I am burned out of green bean casserole for the rest of eternity. I was telling her about the discussion here about dishes for Thanksgiving and she wants to give it a whirl. So, if any of you feel like taking the time and sharing, please.

I don't have more complex recipe handy, but my favorite sweet potato dish, is simply baked without ANY stuff added.

Especially marshmellows/brown sugar/etc. Let me emphasize: NONE of this type spoiler.

And oven baked sweet potato fries/chips are magnificent.

The most important part of making sweet potato casserole is to make sure you put a lot of butter in the bottom of the casserole dish. More than you would think.

This makes it much easier to slide that crap into the trash can.

I'm going to be contrarian and post the family Candied Sweet Potato recipe:

Candied Sweet Potatoes

Steam or bake the potatoes, after cooling, peel skins and slice into 1/3 -1/2" slices

2 cubes of butter, melt in large sauce pan
2 cups of brown sugar
1/2 cup maple syrup
1/3 cup granulated sugar
1/3 tsp. salt
1 Tablespoon dark molasses
Dash of nutmeg, about 1/8 tsp.

Cook together until mixed, don't overcook or else you'll have caramel.

Heat oven - 350 deg.
Pour over sweet potatoes, cover, turning every 15 minutes or so, for 1-1.5 hours. Basically, cook until potatoes are semi-firm to falling apart!

****I usually use 1.5x this recipe to about 5 lbs raw potatoes.

SWEET POTATO CASSEROLE

3 cups of cooked sweet potatoes
1 cup sugar
½ tsp. Salt
2 eggs
½ cup melted butter
½ cup milk
1 tsp. Vanilla
1 tsp. Cinnamon

Mix well and put in an 8 x8 baking dish. Top with the following mixture:

1 cup brown sugar
1/3 cup flour
1 cup chopped pecans
1/3 cup melted butter

Bake at 350 for 30 minutes

Blech. To each their own. However, ^^ this above looks good with the pecans - more like pie Smile

As kids, we always steered around the marshmallow topped dish on Tday. Too sweet.

Plain, baked, maybe add a touch of butter and a sprinkle of brown sugar. I do love sweet potatoes.

I saw on "the Kitchen" yesterday on the Food Network a recipe for Twice Baked Sweet Potatoes.
I have make Twice Baked Regular Potatoes with success and this looks equally great.
There are multiple recipes on line for this and highly recommend trying it.
It is a little work but not too bad and always a great taste.

I made America's Test Kitchen's version for years. Very good and most of the sweetness is in the potatoes, not additives. I don't have it at my finger tips, but should be available on their website.
