I'm interested in some dehydrated foods. For example, when I get in the mood for a good home cooked omelette I often do not have fresh onions, bell peppers, mushrooms, tomatos etc. I was looking at their dehydrated onions, peppers and more. Just add a little water to rehydrate the veggies. It's not cheap but if it will stay pantry shelf stable for awhile I think it might be worth it. Link doesn't appear to work for me. Is your own freeze dryer within your budget? I do many things with mine, including the things you list and they work great. I will say, however, that while the flavor and nutrition of the freeze dried items remain and are as good as fresh, the consistency often does not. Firm things, like peppers tend to do well, but rehydrated mushrooms, for example, tend to be a bit rubbery, onions tend to be a bit soft/mushy, and tomatoes will not rehydrate well at all as far as keeping their shape. Things like these are great for adding to soups, stews, sauces and such, but not so good otherwise.
