Corn has been being picked the last two weeks or so up here. I've always wanted to try Mexican Street Corn ever since watching the epic film Nacho Libre. I finally got around to trying one recipe from Chef John: Mexican street corn My first try, it was good, but not great. I think I used too much of the Mayo spread. Second time dialed it in. Less spread really let the grilled corn shine through off the BGE. Yeah, I know, I neglected pics. On the plus side, I'm using Sig Forum's highly recommended Duke's mayonnaise. A member pointed out it's available up nort here at the Walmart. Used it on the corn spread and my BLT. Yeah, no pics. Does this recipe look good to the experts? Because it's tasting real good. | ||
