Getting the damn door out of its jam/framing just about ended me. I had to remove all the trim from the back side of the opening, and then cut out part of the framing to allow the door to come off the track and out of the wall. That was the most annoying part of the entire process. Putting it back up was a cake walk, and since I was careful removing the trim, I got to re-use it, so no staining issues there either.

I am curious why you had to cut the framing to get the pocket door out. All the pocket doors I have ever worked on all I had to do was take off the casing and then the door disconnects from the carriages with the wheels and the wheels/carriage stay in the track. The door drops down and out the opening.

I did something similar. My wife wanted a dutch door to our kids room when he started crawling. That way he could be contained & play with toys. But couldn't get out to the stairs.

Dutch door start at like $800 & go up.

I took the hollow interior white door to the saw horses. Ripped in in half. I cut down a 2x2 to fill the space. Added a hinge & hardware. Probably cost me $10 in parts, putty, and paint.

The door we have is odd in that it has internal wood framing on both sides of the sliding track making it almost impossible to access the hardware on top of the door. Partially detached hardware on the partially detached internal door header also really helped to muck everything up. So I took my jigsaw and carefully cut a couple slots in the wooden pocket door framing to allow access to the door hardware.
