ftttuChile Heads: Hatch Chiles are in!
We got some they were selling at the entrance to Walmart, and we put them on everything we eat, including oour grilled chicken sandwiches.

Had the veal already, and as much as I like marsala, I had to try something with the hatch chiles. They were delish!

youtube is full of ways to peel roasted chilies...doesn't matter what kind of chili, I just stick 'em in a paper lunch sack for 10-20 minutes (till they're cool enough to handle).
The residual steam will loosen the skin and it will scrape off pretty easy. I just use the back of a carving knife and if I get most of it off I'm OK with the little that remains and it does add flavor.
