I made Chili Verde with hot Hatch and smoked pork. Took two Dos Equis to wash down a bowl. Sorry, no pics: camera melted.

Yup I just made Hatch chicken enchiladas the other day. One of the few things I enjoy about this time of the summer.

Just put my order in for a bushel of Big Jims. With 2 day air they should be here Wednesday or Thursday.

For us East Coasters, a bushel is $108 delivered. It sucks paying such a high price but the flavor is worth it.

Just had mac-n-cheese with Hatch chiles. Yummmmm.

Many of the ones here locally seem a bit old and wilted, detiorated in quality. They're trucked in and it's hit or miss on quality.

I'll be in New Mexico in a few weeks and I'll bring back fresh ones to process at home. Mild for me, I don't do hot.

Chili Products of New Mexico makes and markets locally/regionally a mild Chili Rellenos, they're sold in the frozen case at Albuquerque Costcos. I'll have 3 big assed ice chests with me, with dry ice, I'll fill them and bring them back. I've got the freezer cleared out and ready.

There are Hatch Green Chiles, then everything is is a lesser substitute.

A friend is bringing me back a bunch from New Mexico today, driving back to Colorado.

We have a bunch of options to buy them here, too, stands scattered about Denver metro.

I had a hatch chili burger for lunch. HEB really goes all out for hatch chili season, and put out a ton of seasonal items (burgers, tortilla chips, King Ranch casserole sauce, tortilla soup, etc.). They also sell hatch chilis and DIY roasters.

Smoked a full turkey breast yesterday - about 1/3rd went to make a King Ranch casserole with HEB's King Ranch sauce & both yellow corn and HEB butter tortillas (flour)...added some diced serranos for a bit of heat. YUM!

We'll roast a buttload of them for making burgers, as well as beef and chicken fajitas.

I love hatch chiles so I bought about 2lbs worth to roast and freeze. WOW what a pain in the ass it was to peel them. Any tips to make it easier in case I decided to get some more?

Nope. I escape the mosquito coast every summer to our little condo at Lake Tahoe (NV side). Raley's has the NM Hatch. Try smoked pork in your Chili Verde. Yum.

Edit: Publix does carry canned, chopped, mild and hot Hatch.

Green Chiles grown in the Hatch valley of New Mexico. Prized for their flavor. Similar to Anaheim peppers.

It was warm and it rocked the house!
