I've only done hot water bath canning (jam and apple butter and stuff like that). From my experience with that, I am absolutely sure that an Instant Pot is less than ideal for canning and pressure canning, even if it reaches a perfectly safe temperature. The capacity of the Instant Pot is tiny compared to a dedicated canner, and it will heat up MUCH more slowly than a dedicated canner on the stovetop (anything that plugs into a normal outlet can only draw a maximum of 1800 watts, which is about 6000 BTU/hour, or half what a decent stove burner puts out). Between a longer cycle time and more batches, serious canning in an Instant Pot would be a real pain. It just might be a reasonable way to do a little bit if you've already got one. | |||
