frayedendsWhat cut of beef is this...
I was at this great cocktail party for my girlfriend's company retreat Boca Raton. They had about 8 of these giant roasts. It looks like a leg, hip maybe. I was surprised at how tender it was when cut up. I figured that muscle from this area would be tough. In any case the presentation was impressive.
Oh and she also rented us this for a day. Nothing to do with food, but I have to post because it was such fun.

bald1That's not beef, that's EMU!
(Emu is similar to grass-fed beef in color and taste, but slightly sweeter.)

Elk HunterNot sure what they call it today, but when I grew up it was called a hind quarter. Looks really good, too.

frayedendsThanks for the info. This meat was very tender. Much better than I’d expect. Steamship round it is based on what I’ve found online.

YellowJacketLooks like a lower round (back leg.) I also call that area a ham (which it is, if on a pig.) Had not heard the term steamship round but that's definitely it.
Good roast cuts. I only know my butchering terminology from butchering my own deer. I will have to try this whole cut with the bone in. We used to smoke that whole quarter back in the day but haven't done it in along time.
