I’m focusing on things that make me happy. That brisket looks good! We made tacos the other night out of some left over brisket and they were the best tacos we’ve ever made!

I’m going to be making a few gallons of my copy cat Zuppe Toscana recipe today. When it’s cold and I want some comfort food it’s hard to beat a home made soup that’s full of bacon, sausage, potatoes and kale. Smile

No news, focusing on my family and health. Might do a standing rib roast. This too will pass.

Made Tacos last night 3.5 lbs of chicken breasts and thighs. Should last me through tomorrow.

Might need to make an avocado/lime run though as my supplies are getting low.

I persuaded my wife to close her Fakebook account. So, I won’t have to hear any more tinfoil hat hysterical conspiracies sent by members of her family. That is going to be a blessing in itself.

Tomorrow; remember that it's the birthdates of two friends. Breakfast. No news. No computer. Prayer. A cigar, and a walk around the neighborhood. More prayer.

It's all about how you season the meat and proper temp control. Don't short change the rear and it should come out beautiful. Also try to find a prime cut if you can.

My wife is concerned about the potential for street violence.

She has canceled all her in-office patients and is planning to work from home for the day, catching up on paper work, and if she "sees" any patients, it will be remote -- virtual (online) appointments, if any.

You might want to get that in before they get around to banning meat.
