I was going to do some steaks on the grill but it's raining/ sleeting/snowing here so we made a pot of chili.
Didn't stop me; sirloin on the grill and baked potato and spinach. Cabernet. Wasn't snowing
that much!

And yes, that gumbo looks good.

joatmonvA rack of ribs just went in the smoker. A couple hours and they'll be done.

lymanlast night was a Fat Tire,,,
followed by some delicious Ruritan made stew (I get several quarts from a couple different local clubs)
and a grilled cheese made from Aldi's Italian loaf bread and Muenster cheese,
then more local brown ale (Legends)

petrTonight was chicken breasts with Chipotle seasoning and enchilada sauce in the crock pot. Burrito shells, squeeze of lime, sour cream, salsa, green chilies, and cheese to make a soft taco/burrito. I'm following it up with a Jim Beam black and Coke while watching the local news.

P250UA5That pot pie looks great! Ours is quick & easy, pre made crust, chicken & vegall.
Tonight was a quickie 'chili'. Ground beef, onion, pinto beans & some pace. Been a long weekend with a 5yr old with the flu.

NMPinNYCI had several ripe Haas avocados from Costco so I peeled a few and added some minced onion, a pack of sazon, and a squirt of lime juice and ate that simply on some toasted torta roll, also from Costco.

benny6Thanks! We followed the video from Pepperidge Farm, directly from their website.

I cooked 2 pounds of boneless, skinless chicken breast strips in my Ninja Foodie pressure cooker for 10 minutes, then chopped the chicken and added it to the pot pie filling. I used fresh parsley and thyme instead of the dry stuff. I added salt to taste and a little more flour to thicken it a little more before we poured it all into the casserole dish.
I also sprayed my casserole dish with PAM so the pastry dough wouldn't stick to the stoneware. It was a lot of work the first time, but it should go easier now that we had a successful trial run.
I'll have to look up "moussaka" (Greek; right?).
