What’s your favorite instapot/pressure cooker meal?
Looking for new recipes… preferably “one pot meal” type things like a chili.

Alton Brown’s pressure cooker chili. I modify depending on my mood. Adding heat with jalapeños. Sometimes beans.

i'm not sure about favorites. I use it most frequently to make ox tail soup (i'm hoping the collagen rich broth is helping me).

oxtails, salt, sugar, soy sauce, ginger, green onions.

after cooking, skim off the saturated oil and filter out the scum.

then oxtail, broth and fresh rice in a bowl with salt, white pepper and sesame oil to taste. side of kimchee.

We cook ribs and 1/4 chickens in our pressure cooker. Done in 25 minutes an they can't be beat. If we make chili, thats done in a big pot on the stove.

Porridge for breakfast. We keep a container of dry mixed ingredients for convenience. If the batch is too large the excess freezes well.

Exactly what I do except mostly just drink the broth as a meal substitute then freeze 3-4 quart containers. Kimchee fan here too ! Wish I had bought an 8 quart pot instead of the 6.

Mrs. Flash had a pressure cooker blow years ago and as a result, we don't allow them in the house.

We do use crock pot cookers though.

Hit me with some crock pot meals! They are welcome too! I love the simplicity of being able to scoop a meal into a container and heading out to work without having to "assemble" anything.

My wife and I love chuck roast in a crock pot. I slice an onion into 1/4" slices and cover the bottom of cooker, a few small stalks of celery adds flavor too, add 3-4 lb roast seasoned the way you like and about a pint of liquid. beef broth is good, Better than Bouillon mixed up is good, just need some liquid. If your roast is on the big side, divide it into smaller sections - takes the seasoning better with more exposed sides.

I usually brown the meat in a hot skillet before putting in crock pot and that is good but I doubt I could taste the difference between browned/unbrowned in a blindfold taste test once fully cooked.

Open a packet of dry onion soup mix and sprinkle on top of roast. Cook slow for 8-10 hours. Add some potatoes and carrots about half way if you want. Meat will be fork tender when done.

Save the liquid and add a mix of a couple tablespoons of corn starch in approx 4 oz of cold water. Mix well, always use cold water w/cornstarch otherwise gravy will be lumpy. Stir cs mix into drippings over heat and stir until thickened - just takes a couple minutes.

This reminded me it's been a long long time since I made anything in it with more than one ingredient. lol

When I was making more complicated things in them, this white chicken chili was my favorite.

Used mostly for making stocks and soups.

Favorite soups: ham & bean, chicken noodle and broccoli-cauliflower cheddar.
