Finally time to make this black grade American Wagyu cut of beef. This is the cap of rib eye. All i put on was a sea salt and pepper blend from Jacobsen Salt Company. It came with the order of beef.
Beautiful marbling!
I seasoned it about a hour before the smoker was ready so it dry brined a bit. So it went on the smoker at about a temp of 225 to 230 just to absorb some smoke for about 45 to 50 minutes.
Target temp was about 122 to 124 on the smoker. Then the reverse sear on the open fire.
Made some shrimp in lemon oil and citrus and chili blend seasoning. Also some baby bella shrooms in red wine and butter.
All plated up and in my belly shortly after pic.
All i can tell you is this was the best cut of beef I have ever had. The cattle that gave it's life for this cut did not die in vain.

GustoferLast night I made lobster mac and cheese with a side of fresh picked broccoli with white cheddar/gruyere cheese sauce.
It was quite tasty, but...umm....I'll trade you.

GT-40DOCI have never tried to smoke/cook that particular cut of beef, but I certainly would like to give it a go!!!!

Balzé HalzéI've heard that American Wagyu pales in comparison to others, particularly Japanese Wagyu, and to be perfectly frank is a waste of money. It sounds like you had no regrets though, and that's all that matters.
I'd love to try an authentic cut of Wagyu, but i just can't see paying $150-200 for 12-16 oz cut of meat.

jigray3I had the Kobe American Rib Cap at Gordan Ramsey Steak in Vegas about 6 years ago. He may be an asshat, but that was the best steak I've ever eaten, and it was less than $50 at the time.

What the heck?!?! I've paid $90 for, four prime cap steaks at Costco before. That's a steal for eating out considering any decent steak house is charging $35+ just for a plain Jane ribeye.

I remember it was $49 at the time, but just went to the website and checked the menu and it's up to $69.00 now, but I imagine that's still not bad. I had never heard of that particular cut before that evening, but the waiter recommended it highly, and he was right. Gordon Ramsay Steak is in Paris Hotel and Casino if you happen to be in Vegas. The menus on iPads and the mirrored steak cart is a little over the top, but the half dozen hostesses all dressed exactly like they are in the Robert Palmer Video Addicted To Love actually make the steak taste better.

ArtyI had Kobe beef once in Japan. I didn't pay for it so I don't know how much it was, but it was the most delicious piece of beef I have ever eaten.
