My mom cooked them until tender. Salt and freshly ground black pepper and a pat of butter. She and I were the only ones in a family of seven that would eat them. Now I’m the only one in my own family of five that eats them. I enjoy them weekly.

P-220I am sorry, I have nor recipe to share.
Your thread reminded me of when I was younger, my Mother would make liver and lima beans. I absolutely hated that meal, and it was really the only meal my Mother made, that I hated.
One of the only other foods I hated, was brussel sprouts, until a few years ago, when they started dressing them up and air frying them. I find myself ordering brussel sprouts at a restaurant now.
So, I guess what I am saying is, there may be hope for lima beans yet.

PHPaulGlad to see I'm not the only one!

The list of things I was forced to eat as a child that will never pass my lips again:
1. Lima beans, obviously
2. Parsnips
3. Rutabaga
4. Cauliflower
5. Liver
6. Beef Tongue
7. Cooked Spinach (and most cooked greens-raw is okay tho)
Things I initially thought looked disgusting or tried and didn't like but do now:
1. Rhubarb
2. Sauerkraut
3. Most cheese (I though Velveeta was cheese when I was a kid...)

cmparrishI usually boil mine with salt/pepper, about a 1/2 stick of butter and some type of ham (ham hock, cubed, sliced, whatever I have on hand). If for some reason I don't have ham on hand, I'll use bacon.

HRKSoak dry lima beans overnight in water
drain and rinse
add two qt veggie broth to crock pot
add 1/2 gt water
add lima beans
salt and pepper,
add minced garlic, chopped tomato
cook until soft about 4 to 5 hours on high
remove pot from crock pot cooker
take to sink,
remove strainer
dump lima beans into disposal
turn on disposal
put crock pot in dishwasher...

cparktdI love baby lima beans but it seems all the ones we get now the skin is tough. Or maybe it’s just the way my life prepares them?
