What do you use beef shank for?
I like to buy it about 1” thick, salt and white pepper, then cook it for about 45 min in my instant pot.

Comes out as the best fall-apart shredded beef. Strong beefy flavor, great use in a myriad of dishes. For us most often as the meat for tacos, burritos, or a “burrito bowl”.

But also goes great with white rice and done homemade “teriyaki@ sauce (drippings, coconut aminos, coconut sugar, garlic, ginger…)

What do you guys do with it? Looking for more ways to use this cheap cut.

My favorite is the braised Chinese recipe that is served cold.

I use it in place of veal shank when veal is not available for osso bucco. I pre-cook it with onion and garlic in a pressure cooker to heat tenderize, then finish with root vegetables. Usually serve with orzo.

“Door stop” is totally correct if you do not heat tenderize the cut of meat… it would be almost inedible!

I've made beef ossobuco a couple times, really good. Last time slow cooked/smoked the beef some first on BGE instead of pan in prep, that really was nice.
