I haven't seen many places boil them first, but have seen a number steam them first. It cuts down cooking time, and cuts down contamination in the fryer oil (i.e. oil lasts longer). My buddy at his sports bar just returned my text. Currently they: Season and bake. Let drain. Then deep-fry. Can't remember where I saw the boiling method for wings. May have been the same place when his dad ran it. I've boiled potatoes until 70% cooked, cool & rinse, let sit, slice, then fry. To great raves. | |||
