The classic tomato soup/grilled cheese sandwich combo - ever do it with homemade tomato soup?
Soooo good. Coffeeaddict made this for dinner tonight...She roasted the tomatoes, chopped onion, and garlic cloves and then put in a pot to simmer, added fresh chopped basil and then used an immersion blender. It was sooo good!
Here's a look after roasting and simmering on the stove before being blended:

Wow, that looks great! I sometimes make my own tomato soup; it's easy and so much better. Canned tomato soup (Campbell's in particular) contain way too much sugar.

You actually nailed the reason she made it this way - gotta get the glucose levels down!

That really looks good. What is the broth? Did you add any?
I too go the Campbells tomato soup. We put milk in it to thicken it some.
Some studies are saying onions help control blood sugar which I see you have some in there.

She used chicken broth...You could certainly add some cream or milk if you wanted a more creamy texture. It was delicious!

Looks delicious! My mother made tomato soup in her Mirro Matic pressure cooker. The one with the 3-position weight. I used to love hearing it jiggling – something good was on the way!

Brings back memories of HUNDREDS of firehouse lunches back in the day (with canned soup). Soup and sammies and Andy & Barn reruns on TV at noon. The good ol’ days.

Yes, in times past. The only way to get salt levels down to non-preservative. A dash of nutmeg is the 'secret' ingredient.

My dad used to love my homemade Tomato soup. Definitely use an immersion blender to smooth it out. I make lots of soups from scratch - pretty much the only way I eat soup any more.

Yeah, that needs to be the way I do it also. Prepared soups tend to be loaded with either salt, sugar, or both. No bueno.

Arguably one of the best appliances a home chef can purchase. While toasters get a lot of usage and a mixer has its place, an immersion blender will change your cooking skill level.
