Sounds like it would work. I basically do the same thing to make Limoncello by steeping lemon zest in Everclear for about 3 months. That gives it enough time to pick up an incredibly strong lemon flavor. It should work the same with coconut, you will just have to experiment with how much and for how long to give it the flavor you are looking for. After you're done, you can always cut it with simple syrup if you want to sweeten it up a little.

Since Rum is a perfect solvent, it will absorb the flavor well, and yes almost all commercial flavored rums are too sweet. I have Made my own Lemon-cello the same way.

I have a question about lemon-cello. I only had it twice and I forget the brand but pretty sure it was the same both times. It tasted extremely bitter, like the pith of a lemon. Is that how it's supposed to be? I was expecting a more sweet shot. The stuff I had was gross. Maybe it's just a certain brand?

Take one coconut and one drill. Use drill to bore hole in coconut. Use funnel to pour rum in through hole. Put in refrigerator (or pail of ice water if refrigerator is not handy), keeping hole on top.

When thirsty, insert straw in hole and sip.

We used to do it that way when I lived in Puerto Rico, where coconuts grew on trees and very high quality rum was quite affordable.

Limoncello is incredibly easy to make. The recipe I use calls for Everclear, some call for Vodka. The process is the same either way, of course the strength of your final product will depend on what you start with.

Put whatever quantity of liquor you want to start with into a container that you can seal tightly. Slice the outer peel off of lemons, and drop them down into your liquor. You only want the bright yellow part, leave as much of the white pith behind as you can or you will end up with a bitter final product. I use a vegetable peeler, that seems to work well. Use as much peel as you can cover up with liquor, the more you get in there the stronger the lemon flavor will come through. Seal it up and set it in a cool dark place for about 3 months.

After it has finished steeping, pour the infused liquor off into whatever container you are planning on storing it in. Ideally, the container will be about double the volume of the liquid you have at this point. Discard the lemon peel.

Make enough simple syrup to double the volume, and pour it in there with the liquor. Shake well, and you're done. I like to store mine in the freezer, it's very refreshing that way. You need to be careful with this stuff, if you start with Everclear its going to be about 90 proof and it can get you in a lot of trouble fast. You can always cut it more with water later if you wish to get it down to a more manageable level of alcohol.

^^^ Perception ^^^ is right on with making process, it is how I did it.


I made some great Lemoncello but used Everclear not Vodka.
You would think using Everclear would make some kind or rotgut stuff but it does not work that way.
Everclear works much better and is the only way.
