Prices are up right now but should settle down soon. Crawfish Étouffée is very tasty. How many of you like crawfish? I hear they are flying them up to Chicago to eat at the upscale restaurants.

I love crawfish season but prime crawfish season typically matches lent (i.e. March 5 to April 7 this year) as that is when they're the largest and the shells are the softest. I eat 8 or 10 lbs per week during prime crawfish season.
LSU's Ag Center just posted 4 days ago said that last week's historic freeze across the south should only be a temporary slowdown on crawfish growth. It was in the 70s today.

I like crawfish, but I refuse to suck the head…lol. Been to several crawfish boils in Louisiana at friends homes, but it has been many years since the last one. My local grocery store will do a crawfish boil this time of year and sell plates. They also will roast New Mexico Hatch Chili Peppers during the season.

I would be afraid to eat any crawfish at any northern resturants... Even if they claim to be a true cajun resturant or even owned by cajun.....Once in Jacksonville, Fla at a true cajun resturant owned by a former New Iberia, La resident and the seasoning was so far off that I had to actually question the actual owner and his excuse was that he had to de-tune his seasonings because the locals would complain that there was too much seasoning.. When he asked where I was from my answer was from near Baton Rouge, La.. He then appoligized for the lack of seasoning........... Like jambalaya served with a red tomato gravy (YUCK)......... Or someone at a California resturant ordered crawfish and the waitress wanted to know how many they wanted because they served them individually.................. drill sgt.

Thanks to our resident "Crazy Cajun", and the idiots over at the Peace Corps, an AWESOME Crawfish boil was had. Good times!

C'mon man! Where you live the chile roasters are outside every grocery store during the season, and Hatch is what, 3 hours away! Here in VA I have to roast my own from somewhat less than fresh stock (fresh chiles start to self-digest after picking so if you are buying mail order you're taking a chance). We're probably a little better set for the Crawdads, I can catch these in the creek behind my house (I did this often when I was a kid, but pollution has rendered this practice questionable).
I'm with Norm on the sucking heads part.

Oh, I'm definitely good on the chile, but I have jack for crawdads out here. I want both!

Good old crawdads. Lived on a lake up in Michigan, growing up in Jackson County that had tons if crawdads. Caught a lot if them and since my mom was from the south with tons of cajun influence we enjoyed a whole bunch of dishes that firmly involved crawdads. Can't remember which chain resturant it was, Steak and Ale or Red Lobster that had a dish called finger lobster. I firmly believe that the so called finger lobster was Crawdads.
