... Oxford American Dictionary

Oxford being located in a 'colourful' country, I'd suspect a change of dictionary to something with "Webster" in its name might get rid of objectionable 'u's that might sneak past an editor based in the U.K.

Live dangerously, set it to The King’s English.

Then you catch a lift indoors, the car’s hood becomes a bonnet and the trunk the boot.

A while back, I had my iPhone set to the Aussie female voice. It did the colour thing. But it also defaulted to Aussie daylight saving time dates, which are different from US. To make it worse, I repeatedly asked Siri (who I believe is incredibly stupid) when DST changes in the UNITED STATES, and she kept giving me the Aussie date. I could only solve that by changing to a US voice.

It may be different now.

Thus the metric system did not really catch on in the States, unless you count the increasing popularity of the nine-millimeter bullet.

The solution!

I lunch at Shake Shack most Fridays. I like the little quarter-pound cheeseburger that isn’t too calorific. My T-Mobile store is adjacent to Shake Shack so I sought the answer there, and got it.

As I stated in my OP:
In Settings => General => Dictionary I have:
English (US) New Oxford American Dictionary

But there’s ALSO:
Settings => General => Keyboard => Keyboards

And there were several keyboards listed:
English (US), English (UK), Greek, etc. And, for some Weird Tim Cook reason, my iPhone was using English (UK) in preference to English (US) even though English (US) was listed first. Deleting the English (UK) keyboard fixed the “colour” problem.
