For those who like SPAM
Now you can make your own!



I was a little skeptical, but I made up a loaf yesterday for shits and giggles. Keeping with the instructions and leaving it in the fridge overnight, I fried up a couple of slices for breakfast and this stuff is great! Tastes just like the real stuff.

5 lbs - Pork Shoulder (ground)
1 lb - Ham (ground)
2 TBS + 1 tsp - Tender Quick
3 TBS - Sugar
3 TBS - Corn Starch
1 TBS - Kosher Salt
1 Cup - Cold Water

Mix Tender Quick, sugar, cornstarch, Kosher salt and cold water together until everything is dissolved.

Combine with ground meat and thoroughly mix.

Spread mixture into 2 - 9x5 loaf pans and press firmly to remove air bubbles.

Tightly seal with aluminum foil, place into a water bath and then into a 250ยบ oven for 3-3.5 hours or until they reach an internal temperature of 155F.

Remove from oven, place a heavy flat object (I used a brick) on top while still hot.

Let thoroughly cool, then place into the refrigerator with brick overnight.

Remove SPAM from pans and slice as desired.

....never fails to amaze the ingenuity of members who can overcome any challenge.....

although I've never been on the brink of the kind of 'spam-deprivation-induced psychosis' that leaping into a home-fabrication project it's somewhat soothing to discover the possibility is at hand for the resourceful homesteader

Costco sell Spam with 25% less sodium. In my opinion it is just right.

I wonder if you could cook/can this recipe in a pressure cooker?

I'm a saltaholic, so probably not the best person to ask. Tasted just about right for me. It would be easy enough to just cut down on the salt if you like.

And yeah, it would be nice to be able to pressure can it somehow. A guy could make up a couple batches and be good to go for awhile.

I am one of those folks that grew up with Spam and bologna, as it was cheap and we had a big family. To this day, I still like both, and still eat both on occasion, but not regularly. That was an interesting video.

I've canned salty pork in a pressure canner. It tasted a lot like salty boiled pork.

But I didn't try and make it into Spam. This I will try.

If by "surprised", you mean the relatively low amount of Kosher Salt for such a salty product, the Tender Quick is primarily salt as well.

TBS table salt weighs 17 grams.
TBS koshering salt weighs 6 grams.

So you only need a tsp of table salt. But koshering salt is just large grained salt. Nothing special. No rabbi blessing.
