GibbMy father makes a homemade sage stuffing baked in a muffin tin "stuffin muffins" and we would save a few for breakfast the next day.
Break apart the stuffing, fry it in a skillet and then add scrambled eggs... Stuffing and Eggs with sausage on the side was the joy of my mornings as a kid! Even better was around thanksgiving when we'd add a sliver of pumpkin pie to the plate

Woah now! That's something I've never seen or heard of (aside from the asian breakfast). I may have to try this using turkey drippings!

Childhood favorite was pancakes with eggs and bacon or sausage, but nothing that can compare to your story and such great memories.

SIGGUY (THE 1ST)My Mothers Chipped Beef on toast. She had a recipe for the white sauce from my Grandmother which was delicious. Dad being the old Navy guy just loved it, which I think created mine.
Foolishly I never got the recipe for the sauce from her, and as of March, will never be able to.

I used to really enjoy the Pillsbury cinnamon rolls on Sunday morning with some scrambled eggs for protein.
Some other favorites were omelets with shredded cheese and Buddig beef mixed in.
Bacon... always plenty of bacon as well as a kid.
Can't forget Spam & eggs every now and then too. That was always good.
The OP's chorizo and egg frita looks delish...
I'm a big fan these days of a Mexican breakfast, whether it be chorizo & eggs, huevos rancheros or chilaquiles rojos, I never leave hungry.

TannerBoylOn the occasions that I got a sugar cereal, I loved Fruit Loops. That probably would have been my go-to if I had a choice. Not sure if I could stomach them nowadays.
In my teen years, I started a keen respect the a breakfast burrito that is still with me today.

Oat meal or Cream of Wheat was about all the breakfast we ever had at our house. If we did have cereal we had to eat it with a fork and then pass the milk on to the next family member

BillyBonesNYAs a child we were very poor, rice and cottage cheese.
Now and then I enjoy having a bowl.
When grandma would come and visit, it was Kasha and Borscht.
Rice was cheap and so was cottage cheese.
A hamburger was a delicacy and only had a taste of steak when I was 10.

83v45magnaFavorite? Saturday morning waffles, bacon and homemade syrup. It could take a while because for 3 boys, Dad and Mom, 1 small round waffle iron was what we had to do it. I think it added to the excitement.
Though I have a modern Belgian waffle maker, I wound up with that small round waffle maker and, though it is silly, just can't bring myself to throw it away.

Yeah, "shit on a shingle" is creamed chipped beef on toast. I've never heard of it being used to refer to biscuits and gravy before, although the base concept is somewhat similar (both consisting of chunks of meat in a white sauce over top of bread).
