I have a gun for sale on GB and I received and email through GB from a potential bidder who gave me an acceptable offer.

How do I end the GB auction yet still pay the GB fee's. I don't want to get in trouble by cutting them out of the sale since the buyer found my gun on GB.

If no bids, yet, you can end the auction. Just click on the End Auction tab. But, once a bid is made, you can no longer end it early.
If you can end it, you will not incur a seller's fee, of course. But, you still have to pay the listing fee.

You can't end early, sell to a nonbidder, and still give GB their fee.

Have the buyer bid their offer amount.

When (If?) the buyer wins, GB get paid.

Somebody trying to go around the auction system like that would make me suspicious.

Why did this "potential bidder" not simply bid?

And, if you had a certain amount in mind, why would you not have included a "buy it now" price?

Can you edit the auction and add a buy it now?

Only if there is no bid, yet.

Kinda what I was thinking. My opening bid was $2000 and my buy it now was $2500. He offered right in the middle.

I think my best option is to change my buy it now to the price we agreed on and he can just use the buy it now feature through GB.

Why not just leave it be and let him bid? If he wins, he wins. If he doesn't, you do Smile

I would do that......confirm a time that you will do it and have him hit the buy it now tab right after you change it.

I've done that very thing on eBay before.

Made an offer through messaging. The Buyer edited their Buy It Now Price. I bought it.
