Agua de pepino, where have you been all my life?

Take two hefty cucumbers, chunk them up, and stick 'em in the blender. Add six cups of water and blend the hell out of it. Strain out the solids and add 1/3 cup of lime juice and sugar/honey to taste. Serve over ice.

This stuff is refreshing as all get out, and at 103F today, it's better than the Nestea plunge.

Any other recipes to enjoy?

Yes, I like cucumber flavored / infused water as well. Very refreshing. In Korea, putting cucumber in cold shochu was also nice during the summer.

I prefer small persian or narrower english cucumbers over the thicker pickling type though.
