Steak Tacos: Need Ideas Login/Join 
Get my pies
outta the oven!

I got some skirt steak and plan to marinate in some Tajin seasoning, garlic, lime juice etc then grill on my Smokey Joe and slice thin for steak tacos in soft flour shells

What typically goes on these? I was thinking cotija cheese, cilantro, raw onion, but anything else? Salsa? Sour cream?

Any ideas?

It really depends on the taco slinger. Onions and cilantro are common. Salsa too. Cheese, sour cream, quac, avocado slices, tomatoes, pickled radish, corn, it's really up to you.

I like doing grilled onions - cut an onion crosswise into slices around 1/2"-3/4" thick and then grill the slices on a hot grill until they turn translucent and get nice grill marks on each side. When they're done, cut them in half and pull apart.

I also do this for burgers.

If I buy them at a Taqueria they only have a bit of cotija, cilantro and onion.

If I make them I add sour cream, pico and avocado. I save the guac for dip.

Oh, and I never use flour tortillas.

The taquerias I visit would give you cilantro+onion, lime wedge to squeeze on, and a choice of fine salsa; I like a medium tomatillo salsa verde. Mmmmm, time to thaw out another tongue for tacos de lengua!

To go along with the grilled skirt steak, we like to cook some onion, green peppers, and minced garlic in a very hot skillet until the veggies have some color, but are still crisp. A squeeze of lime and some cilantro and we're done.

Tacos need cheese. Lots of cheese. Diced onion, sliced olives, a little cilantro and La Victoria Salsa Bravo.


We're doing shredded left over beef roast enchiladas tonight. Yum!

I used to make a soy-sesame based asian slaw that I would use on top of steak tacos, Sriracha sauce as the main condiment. I now buy slaw from my local market, which is still very good.
