I had a sudden craving for parsnips – couldn’t remember the last time that I’d had any. So I sliced some up and cooked them to tenderness in my stovetop pressure cooker. Then I mixed in garlic butter, some mild horseradish sauce, and salt & pepper. Dang tasty! Parsnips have a good, and unusual, flavor. I have enough parsnips left to do it again tomorrow, and I plan to do just that. Serious about crackers | ||

Had to Google what a Parsnip is. I think I'll try them. I don't remember seeing them at Krogers. Have to look up some recipies. | |||

I bought these at Whole Foods (on Nobel Dr, just west of I-5). But I’ve seen parsnips at both Ralph’s and Von’s. They’re a pretty common vegetable. Parsnips are related to carrots, but they don’t taste anything like carrots. Nor anything else, either. Serious about crackers | |||

I like to put them in beef stew, along with potatoes and carrots. ________________________ | |||

I have a recipe somewhere for them oven roasted with honey. Very tasty. I too most often use them in cooking stew. | |||

I like them sliced about 1/4 inch thick and slow fried in butter until tender and browned. Sprinkle with salt and enjoy. My Dad used to cook them this way and it is the only way I have ever had them. I'm alright it's the rest of the world that's all screwed up! | |||

I always throw parsnips in with my roasts along with carrots, potatoes, and onions. MY mom did when I was young and I just stayed with it. | |||

BTW, for those unfamiliar with parsnips, look for younger (smaller) ones. Older ones may have an unpleasant fibrous core. Serious about crackers | |||

They are amazing in homemade Matzo Ball soup too! While I am not a fan of all the chopping the end result is amazing and cures all! If it won't matter in 5 years don't give it more than 5 minutes. | |||
