I do. I’ve done cold and hot smoked bacon. Love it. Hot smoked is faster. Cold smoke taste more like what I’m used to from the store.

Yes, but I make maple bacon candy.

Take a pound of bacon, throw it in a big bowl. Throw in half a dozen paper towels and soak out as much moisture as possible. Usually takes half an hour of sitting and churning with the towels to get it really dry. (Swap out paper towels if they are wet)

Take the towels out and pour some Crown Bourbon Barrel Aged Maple Syrup over the bacon. You want it wet, but not puddling syrup in the bottom of the bowl. Throw a couple pinches of fennel pollen in there and a tablespoon of Espelette chile powder. Mix well.

Lay out on the rack in the smoker and run at 180° or the lowest smoke setting you have. After about an hour and a half to two hours, baste with more maple syrup, and flip over. Baste the second side with syrup and turn up to 225° for half an hour or so.

Bacon should be stiff and crisp, but not dried out.

There's a calculator for the cure on the link below. I cure for 10-14 days then let the belly hang out uncovered in the fridge overnight and smoke the next day. I cold smoked with a pellet tube full of apple pellets for around 8 hours. Some people smoke it for 24 hours or more in three sessions.

The neighbor ordered a pizza from the tiny town gas station,.

But they were out of bacon ,so her grand daughter drove 13 miles round trip too the other Casey's for the pizza as they had bacon.

Jeff Yarchin used to do it, don't know whether he still does.

He gave some as a karma, I think more than one time. I never won any bacon, but I did win one of his homemade sausage karmas, many years ago. It was outstanding sausage!
