We planted a few zucchini plants this year, and now the zucchini apocalypse has begun. What do you do with all your zucchini? I need some good recipes!

No recipe but Zucchini Bread was always delicious when the fall harvest started.

they'd come back to find bags of surplus zucchini from their neighbors, in the back seat.

Cut it into spears, marinate in Italian dressing, and grill.

Thinly slice, place on oiled and foiled sheet pan, brush top with olive oil, sprinkle with grated parmesan, and oven roast until edges are golden brown.

Mom always made zucchini bread with her zucchini plants and it was delicious. I'll see if I can find the recipe.

EDIT: Found it, but my memory was wrong - it was my grandma's recipe (Mom's Mom).

Ingredients:
* 3 beaten eggs
* 1 cup oil
* 2 cups sugar
* 3 tsp vanilla
* 2 cups grated zucchini
* 1 tsp salt
* 1 tsp soda
* 3 tsp cinnamon
* 1/2 tsp baking powder
* 3 cups flour
* toothpick(s)

Directions:
* Preheat oven to 350
* Mix together first five (5) ingredients
* Add second five (5) ingredient to mixture and blend together
* Grease (2) two 9x5x3 loaf pans OR (3) three 8.5x4.5x2.25 loaf pans
* Pour mixture into your greased loaf pans
* Bake for 1 hour then test with toothpick. If nothing sticks then it's done.

Zucchini spears, carrot spears, green onions, asparagus spears, and raw sliced mushrooms- all marinated in olive oil with some oregano and then grilled high for 5-10 minutes. Delicious as a side dish with grilled fish or steak.

Stuffed Zucchini

Take a good number of zucchini and par-boil them sufficient to allow the spoon removal of the meat leaving intact squash shells halves.

Saute mushrooms, onions (or scallions, leeks, or shallots) and the cubed zucchini meat then set aside. Seasonings and/or extras are whatever floats your boat.

Stir fry pork sausage and cubed chicken. Other meat or seafood can readily be substituted

Prepare wild rice.
(Other rice varieties can be used but I've found good wild stuff to be the best for our tastes.)

Combine zucchini mixture, meat, and rice. Then layer it over the zucchini shells. Top with medium sized cooked shrimp. Then cover with a healthy layer of mornay sauce (you can go with any number of cheeses here although the classic parmesan and gruyere seems best to me), with a sprinking of paprika. Toss in oven until sauce has light golden highlights and serve.

Key here is zucchini, rice and mornay sauce. Everything else ingredient-wise becomes quite flexible. That said I've found the sausage/chicken/shrimp approach to be excellent. Been making this for decades!

Zucchini bread is great stuff too

Pro tip: on “baseball bat” zucchini, cut off each side until you have the woody, seedy core left and discard that. You don’t need to do that with the smaller ones.

Dear God, my dad planted ten or so mounds with probably ten or so plants in each mound one year. Me and my brother picked all the flowers off we could on our way to the bus each morning and afternoon…..and we were still overrun with them.

We beganheaving them over the bank when they grew….and we were still overrun with them.

Two ways...

The spears on the grill...in tinfoil with butter and salt.

Fried...

Cut medallions and dry between layers of paper towels...salt them to draw even more water out...as much as possible. We even used to put them in fridge overnight which will also dry out the medallions a bit more.

Drench in egg/milk and then bread crumbs.

Cast iron pan with about 1/2" of oil...

Yummy...
