Two reasons. If you ever change the vanity without redoing the floor you will be happy you did. Vanity size can differ. Even between two that are supposedly the same size. Some vanities you can see under so if you ever go with that style you will wish you had.
The second reason I like is the waterproof factor. Especially if it's a bathroom kids will use to bath.
If I'm running low on tile and the vanity comes completely to the floor you can use leftover cut pieces under the back.

Yes, but don't skip the grout. The builder tiled under our dishwasher but didn't grout. When the dishwasher leaked it ran straight to the basement. I've subsequently caulked the hell out of it then used construction adhesive to line the sides and bottom with rubber shower pan liner. If the new one someday leaks, at least the water will come out the front where I can see it.

THIS. The amount of tile you'll use is negligible when it comes to price.
Tile the entire floor and then install one of the new vanities that install on the wall (i.e. off the floor). Best of all worlds.
