I've been doing very low carb/keto thing for a while and with great success. A few big celebrations lately got me off track a bit. With holidays coming up I'm concerned about going off keto too much.

Anyhow I watch a lot of YouTube vids on keto and low carb and have been hearing a lot about Allulose. It's supposed to be about 70% as sweet as sugar and no nasty after taste. I was skeptical.

I do not use artificial sweetener in anything and I think generally it's all bad for you. So I'm not going to start adding it to my coffee or making bbq sauce with it. But I made a keto cheesecake to test this stuff. It's not at all a low calorie dessert, but it's got very low carbs. I used almond flour and butter for the crust, then it's just cream cheese, eggs, sour cream, heavy cream and vanilla. I can make this for Thanksgiving and Christmas and it will certainly keep me from eating any of the other desserts.

The results are impressive. No strange after taste. Everyone says it's like any other cheesecake with sugar. I can tell it's not quite as sweet and that's fine since my desire for sweetness has diminished on this diet anyhow. I may try a flourless chocolate cake next. Maybe pudding for pudding pie also. Lots of no carb ideas.

So if you are looking for a good sugar substitute, so far this one is pretty good.

I drink a ton of sweet tea, sweet green tea... that is... SWEET green tea... as in I like a little tea in my sugar. Big Grin. Same ratio of sugar as in some soft drinks.

So I'm going to try it in my tea as I have been cutting back on my tea to help loose a few pounds and I don't like doing that!

We like allulose. Magic Spoon cereal is actually very good. The peanut butter flavor is my favorite.

We use monk fruit more often for hot tea, koolaid, cooking and desserts as it also has no aftertaste.

Stevia is horrible. Terrible aftertaste and makes my sinuses swell and I almost always get a headache from it.

I'm an engineer, not a nutritionist.

Allulose is 70% as sweet as sugar. If I put 1 tsp of sugar in my coffee, I'm putting 1.43 tsp of allulose. Right?

Yes but... Some say they don't notice a difference with a 1 to 1 replacement.

Notice: Start slowly with this stuff! After doing some quick research I found some reviews claim it works as a potent laxative, and pretty quickly at that! Eek

The smelly gas from eating too much is enough to make your spouse want to move out.

What was that fat substitute like 20 yrs ago...Olestra?

I remember eating an entire bag of Olestra ruffles...it tasted good but then 10 minutes later it felt like I was being stabbed in the stomach with ice picks for about and hour...

This is exactly what I worried about when I read up on this new sweetener. If your body doesn't digest it, then all the friendly bacteria in your gut get a crack at it, and it's fermentation city (i.e. gas).

Apparently the situation is not as bad as various other sugar substitutes, such as sugar alcohols, but it's a problem none-the-less. So, while it may help some, the search for the perfect sugar replacement is not quite over.

Sure...

For the crust I used almond flour and butter. Didn't measure, just made it texture that holds together when squeezed in hand. Put parchment paper in the bottom of a spring form pan, butter the sides of the pan. Put crust down on bottom of pan. I used a cup to flatten it out about 1/4" thick.

4 packs cream cheese (8 oz each)
1.5 cups allulose
3/4 cup heavy cream (recipe calls for milk but I used heavy cream for keto)
4 eggs
1 cup sour cream
1 tbs vanilla (I'd maybe go 1.5 tbs if using allulose, it could use a bit more flavor).

Cream cheese and sugar in mixer until smooth. Blend in cream, then add eggs 1 at a time until incorporated. Mix in sour cream and vanilla.

When smooth pour into spring form pan and bake at 350 for 1 hour.

Warning, it will crack on top when it cools down. I've not found a way to avoid cracking. They say if you shut oven off and leave it to cool as the oven cools it may not crack. I don't have that kind of patience. When you remove it use a butter knife around the sides to separate from pan before opening spring.

One more thing, had a piece yesterday at lunch and last night I did have a tiny bit of gas cramping in my belly for maybe 15 minutes. Can't be sure it was the allulose but maybe. It wasn't bad and didn't last long.

No. 1.5 cups real sugar. I did not increase allulose as they say it’s 1:1. I realize it’s not as sweet but that is okay with me.

I bought allulose yesterday.

Since my throat cancer and radiation a few years ago, I can't hardly taste sweet so in my Cold Brew, which I crave, love and just gotta have, so I have to add a ridiculous amount of Splenda just to taste a little sweetness.

Finishing my morning Cold Brew now (will start my mid-morning one shortly) and put two and a half tablespoons of allulose in the large glass and, much to my surprise...SWEET! Not real sweet, not sickeningly sweet, just sweet enough to knock out the black coffee taste.

Now if they don't come out with some study that shows allulose will make my left leg drop off or something else that's bad , I've got a new sweetener.
