It’s not the intent.

I originally had he purchased $70 in groceries but we were going down a rabbit hole of the stores mark up on products, retail vs wholesale pricing.

I wanted to just keep it simple.

The gift card is for the grocery store. No tricks, no sales tax, no gift card user fees, etc

My 11 yo son asked me almost the exact same question 6 months ago because he saw it on YouTube. The gift card was a red herring then as well.

From the store’s perspective, the guy stole $100. The drawer will be short $100 when the cashier turns it in. From the store’s accounting perspective, cash will be credited $100 and the corresponding debit will be an expense account. That’s it, stick a fork in it, it’s done.

Stupid question unless you specify what metric of "loss" you're looking for.
Actual loss? $30 and whatever cost of goods is if the thief ever uses the gift card.
He didn't walk away with the $100 bill. The store has that in exchange for the card and change.
What's their average profit margin?
Whoever came up with this silly riddle thought they were clever but really just doesn't understand how a store makes money. Or manages it.
