BRLPit Barrel Cooker Chicken - and Brunch
Did my first chicken on my PBC last night. I split them and covered them in John Henry's Pecan Rub. Was too full of other stuff (soup and Bugles) to eat much of it other than a taste which was delicious, especially the parts that got a good dose of the rub.
Stuck it in the fridge and pulled it out to make an pseudo eggs Benedict. Cold chicken, when as moist and juicy as this is, is outstanding. Almost ate a whole breast just plain while making the hollandaise and poaching the eggs.
Phenomenal breakfast/brunch. Can't wait for lunch.
