I was "introduced" to chitlins by my grandma when I was a little boy on the basis of "everything fried in bacon grease" was bound to be good. Since I didn't know what a chitlin was, I accepted the bacon grease theory and they were indeed good!

However, when I was offered mountain oysters, I had been country-educated and no amount of bacon grease was gonna make them acceptable to me. This falls into the oft-quoted Jerry Clower test of acceptability: "If God told me to, I would - but he didn't and I ain't!"
