My daughter and I both order them "scrambled well". My wife doesn't seem to care either way as long as they're not runny! None of us like runny eggs, be they scrambled, fried, poached, boiled, etc.!

My wife and daughter will put ketchup on scrambled eggs, but I do not; only black pepper and sometimes white sausage gravy.

I like mine scrambled a little over medium. I put salt, black pepper, Louisiana Hot Sauce and green onions. Then I put a little ketchup on them. I'm in Louisiana.

Cooking eggs are a benchmark of someone's kitchen skill, principally their understanding of technique and heat control. I prefer a creamier scrambled egg that's not dripping wet. Scrambled eggs that come out rubbery, flaky and dry were abused by whomever cooked them, I get it some people like it that way, I suppose drenching it in ketchup or, salsa can help cover it up and give it some flavor.

The cold butter and corn starch-slurry method I've made my standard, served over buttered toast as Ramsey demonstrated, with Dailey's pepper bacon makes for an enjoyable start to the weekend.



The velvety-cream technique is too rich for me, I like to add Boursin cheese for a taste additive and either minced-up parsley or chives

Scrambled eggs should be served what appears to be just moist (forget about this US Navy dry chunk nonsense) because they keep cooking long after you take them off the heat and will continue to dry out as well. Just my $0.02.
