Christmas Dinner - What is everyone having?


2/3# grass-fed heritage Hereford burger. Coated in Oakridge Carne Crosta rub, grilled over lump charcoal and cherry splits.

Topped with blue cheese, Swiss, aged sharp cheddar (hailing from Wisconsin y'all), onion rings, purple onion, avocado, tomato, thick sliced bacon, and Suckle-Busters Honey Glaze Finishing Sauce, served on grilled Texas Toast.

Washed down with a 2 year old DFH120 Smile This didn't suck....

We are having ham on Thursday when my other son joins us.

Were thinking of homemade chicken soup, but my better half had her lupus flare up do to the snow.

So for me will be a leftover Taco Bell 7 layer burrito and Uncle Bens spanish rice.

A smidge of FRIS vodka and I'm good to go.

My 17 pound Maine coon and newly rescued feral tuxedo cat have been with us all day and our all black tiny Main coon just came home.

I'm happy and ready to go back to work tomorrow.

I went to a yearly thanksgiving dinner at a local diner with my mom every year so she could spend the Holidays with elderly grandparents.

Was great.

They are now long gone but I still enjoy hanging with my old lady at home.

The before picture is back on the bottom of page one. The pork shoulder was a great success if the compliments and quantities consumed were any indication along with the black beans and rice and the rest of the trimmings and appetizers the rest of the family made. Actually my indirect heat setup in my Weber was so efficient, it only took 7 hours for perfect temp meat and tender, juicy, flavorful goodness. Just the right amount of bark and crispy skin too!

Well I had Christmas dinner at my uncle's, it was cabbage stuffed Kentucky county ham, the fixins were green beans, tater salad, smashed taters and white gravy, friendship cake for dessert.

I came home and took some cookies and treats over to an elderly neighbor and then made my way to my friends house.
Then I had supper at a friend's house, it was stuffed pork chops, in cream of mushroom soup, tater tot casserole, green bean casserole, mac-n- cheese.

Then I had a couple of people over, and it was just finger food, as I was already invited to the aforementioned, my friend stopped by my house after her guest left.

I had a few cocktails with the finger food and some gift exchanging. Everyone just left half hour ago or so. Everyone but me has to work tomorrow.

I wasn't in very much of the"Christmas spirit" this year, almost didn't decorate. Heck I didn't get the tree up until this Sunday. In which is when I invited the few friends over, all mutual friends that that only spend time together for Christmas if I invite them, usually they stop by on the way home from their familys.

This Christmas season turned out better than I thought, though there were some bumps and low points.

Sorry no pics as I was too busy cooking everything.

I made a smoked turkey, real gravy, mashed potatoes, stuffing, deviled eggs, green bean casserole, dinner rolls, and served with cranberry sauce.

Turkey and Brussels sprouts in Gruyère, white cheddar, bacon and creme sauce. First time making the sprouts this way, certainly not the last time. Had other stuff, but these two were the stars of the show.

Went to some friends house with fairly large (+30) group. Dinner was grilled chicken qrtrs, baby pork ribs, brisket, venison chili, green bean casserole, Cajun mashed potatoes, and too many deserts to remember. Did a white elephant gift exchange. Had a great time for Christmas 2018. For a gun forum, this place eats pretty good.

Follow-up on the leg of lamb sous vide:

This was my first time eating lamb let alone cooking it. I was told cooking lamb was difficult because overcooked it can be dry and undercooked it can be chewy and trying to find the happy medium can be difficult.

The sous vide made that part ridiculously simple. I ended up cooking it for 12 hours at 131 degrees and it came out almost melt in your mouth tender.

Smoked a fresh Turkey and Sliced Ham, Turkey was brined overnight, sugar, salt, brown sugar, real maple syrup mix, then before going on smoker I mix up some Good Shit (Real name of seasoning) with soft butter and spread it under the skin and season the outside skin for color and flavor



Sliced for serving



Wife made Janes Corn Pudding, a KY Derby Staple, and potato casserole,




Fresh cooked green beans, stuffing and home made rolls/biscuits.

Had open face turkey sandwiches for dinner last night. Only way I actually like turkey. All that effort brining and smoking/grilling paid off last night.
