I am making braised short ribs for dinner in the crockpot. I seared them first, then put them in beef broth to simmer away the afternoon. I filled the pot with sautéed onions, garlic and carrots.

I will be making mashed potatoes to go with, and had planned to do California mix vegetables and turn the braise broth into gravy.

Question: Should I strain out the carrots and onions and serve them as well, or should I puree them into the braising liquid, and make them part of the gravy?

This is the emergency great question, and I have about 2.5 hours to decide.

Please weigh in.

This is the way I am leaning. There are two Vidalia onions and 1 lb. of carrots in there, though. That much veg could result in a diesel powered ass tomorrow...

I'd not puree the veges, but cut/chop them into small chunks, and add them back into the gravy (maybe not the entire amount, the gravy should look more like a soup than a sauced vegetable dish). The left-over veges could be reduced for topping a steak sandwich or in an omelet.

I did make braised short ribs last weekend. Scooped the veggies into the blender and pureed before adding back/making gravy. The gravy was smooth and absolutely divine.

Not that there's anything wrong with divinely smooth gravy, but I'm voting for honkin' big chunks of carrots and onions in your sauce.

That's where we are going to end up, because, with the house still under renovation, and the kitchen in boxes in the garage, I can't find the stick blender.

No pictures, but it was amazing. Dirty mash made with red potatoes, butter, cream and sauteed garlic, with gravy, carrots, onions and fall off the bone short rib.

Sweet lord, on a cold night in Florida, this was outstanding.

Artie, do you have an InstaPot? I have a recipe that sounds just like you did and it is so easy and comes out amazing. I did more of a sauce than a gravy.
