Those tires make absolutely no sense to me unless you're on snow.

I would stay away from REI.

Do you have a local bike shop that caters to Mtn Bike racing ?
Not that you are interested in racing, but they probably know more about the bike technology and can steer you in the right direction.

I see you are in Utah ! What Part ?
In Northern Utah: Bingham's Cyclery: SLC and Ogden

Northern. I don't mind going to a local shop, but have been more expensive in the past. Does REI rent bikes? It may be nice to see if I enjoy riding on some of the trails around here. Part of me worries quite a few will be too advanced for me.

Plenty of bike shops rent bikes. If you are only going to use it "once or twice" a month, just rent one from your local shop. I'd bet shops out in your neck of the woods rent all sorts of MTBs: hardtails, full suspensions, fat bikes, all of 'em!

Might also serve to narrow-down exactly what you want in a MTB as well.

How much should I expect to pay for a rental? I tried to rent one at Sundance a few years ago and it was triple what they quoted me on the phone, so I walked.

See if USU has an outdoor gear rental place. I know BYU does and probably UofU. I’d expect to pay about $40/day

That's what they were originally designed for when QBP started putting out their Surly fat-tires, Pugsley I think was the first model. Riding in the snow around Minneapolis was where it was started. They do well for 3rd world bike touring (durability) however, that much rolling resistance is just painful.

Could range from ~$20-100 / day depending on the bike. A typical hybrid or lower-cost mountain bike will be much less, or something like a cruiser. If you want to ride the newest, full-suspension bike that's 5-10k new they'll make you pay a premium. Ski resorts usually rent bikes in the summer too if you're up in the mountains. At least here in CO they do.

Sundance is a resort here and they quoted me one thing on the phone for the bike and lift, but knocked my socks off when I got there. I'll have to see if any others rent them because it seemed like a lot of fun.

Before I got my own downhill ride I did a half day lift and rental at Peak 8 in Breckenridge. Believe the bike was $65 and the lift $30. So about $25 an hour. I rode hard the entire time with an experienced buddy. Downhill bikes are going to cost a ton more to rent than anything else. There's the increased wear on the bike but also the sheer cost of the bikes being more $$. I built my own Santa Cruz Bronson from the frame-set up two years ago. They are a blast to ride but not cheap unfortunately.
