I got my aluminum trifold bedcover installed. It has black aluminum panels with plastic and rubber seams.
What sort of product should I use to keep this protected and not fade?
How often should I apply it?

The Expedition was Silver so it hid dirt very very well. So doing much between washes was not really needed.
This Barcelona Red on the other hand is not quite the dirt hider.

What is a good spray on wipe off detailer? Something between good washes? Not talking heavy dirt and grime that is what the wash is for.
Just a little something to freshen it up a bit between.

I rotate between Chemical Guys Honeydew snowflake and their Extreme Wash and Wax for the normal washes.
I use Chemical Guys Tough Mudder soap after off-roading. I then give all my suspension components a nice coat of Eezox but looking to switch to Triflow Spray Lubricant as it is about half the cost of Eezox.

303 Protectant is a great product for leather and vinyl interior surfaces and plastic exterior parts. It makes tires look deep black new w/o the gaudy shine of some products. It's available through RV and water craft vendors. Buy a gallon of it and put it into a spray bottle.

For quick detailing, I use either MAGUIAR'S or GRIOT'S products.

Same here. 303 is the way to go for UV protection/restoration. I use it on the plastic trim on my vehicles, on plastic items that sit outside (like my back deck mini-fridge), on tires, etc.

It requires reapplication every few weeks on a car, especially after rain, but for mostly/partially covered items it lasts a while.

I've used Lucas Slick Mist for between-wash touch-ups. Especially after a quick rinse, since you don't even have to dry the car first.

Also works well as a post-wash quick wax, when you don't have time for a full wax job. Doesn't last as long as a full hand wax with a quality paste wax, but it's much faster and easier to apply.

As others have said 303 Protectant is the way to go.

I use it on my dash and other plastic trim in my and also on my inflatable SUP. It will not give you a shiny finish some like but it protects better than anything else I have found.

This, you can also get 303 in a spray can.

I have a vinyl over aluminum cover on my truck and both the manufacturer and my detailer recommended 303. It’s worked perfectly so far. Also great for any exposed plastic or rubber.

303 is, in the RV world, the go to protectant. Use with confidence.

303 would be excellent if the cover was vinyl, but for painted aluminum, I would use a good sealant.

I have recommended Zaino's Clear Seal many times. You just wipe it on and let it dry. Doesn't get much easier than that. It is what I use on my BakFlip folding aluminum cover on my F150.

It can go right over the rubber/vinyl as well.

You just can't beat Meguiars Quick Detailer for in between washes. I use a soft microfiber towel to buff it out. Just takes a few minutes.

Griots Garage Speed Shine. It’s my go to for an instant detailer.

The last two are what I use. But I only use them on a clean car. I don't trust any water less wash or spray on wipe down products, they cause micro scratches.

Speed Shine says it must be used in the garage/shade.

Best of Show can be applied in full sun.

This has more to do when knowing whether the vehicle is too dirty for a detailer or it actually needs a wash.

Given your new truck is Barcelona Red, I'd recommend you try P&S Bead Maker for paint protection and shine. When used consistently, this stuff will create incredibly deep gloss and excellent surface protection. On darker colors this stuff is really great. Best of all, most stuff won't stick to the paint surface making routine detailing simple.
