Splurging on a treat I've not had in 50 odd years *Shadow Cake*
Just ordered something I haven't had in over 50 years that my mother used to make. Found an experienced pastry chef who has a fairly new bakery store in town. She will be making me a rich moist vanilla white layer cake with luxurious butter cream frosting and bittersweet chocolate ganache that is kept refrigerated and served chilled.

You only live once! Smile

Like I said in my opening post, its something my mother used to make. I described everything to the pastry chef indicating the cake was extremely moist and tasty. Not sure what ingredients my mom used but I've never had as good a white cake since. The chef thought her vanilla white cake would be very close. Same with the very rich butter cream frosting. No problem I was told. I believe the ganache was simple bittersweet chocolate melted in a double boiler and poured over the frosted cake and immediately chilled in the fridge. It may have also had a touche of vanilla extract or something else... not sure.

No name of the combination that I know of.

I asked for it to be ready next Thursday. It'll be a 3 layer 6" diameter about 7-8" tall. Big Grin LOL

I've always called it (and heard it called) a "shadow cake".

It's my father's favorite cake as well.

The bakery is a family owned business that opened in November 2017. The daughter, Taylor, is the head pastry chef and has had formal training as has several other young ladies who work there. Most graduated from the Auguste Escoffier School of Culinary Arts "majoring" in pastries. Taylor and some of the others also have experience working at restaurants and bakeries as pastry chefs.

Never heard the term before. Thank you! Did a search and found it is can be prepared with chocolate cake, white/vanilla cake, or both. Frosting and fill layers range from butter cream to fudge. But indeed there are examples of exactly what I had as a youngster. It also attributes this as a regional specialty of New York and Long Island bakeries. I grew up in upstate NY (greater Syracuse area).

Not tasting the particular dessert shown, the pictures look very similar to a doberge cake that is famous down in New Orleans. According to Wikipedia doberge is a variation of a doberge torte from Vienna. Your description sounds similar, buttercream , other fillings in multiple things layers of cake with buttercream or fudge frosting.
Care to advise of the Rapid City bakery location, and I can get one to sample? Big Grin
