I didn’t make quite that many pancakes over the weekend, but quite a few. I can’t make a loaf of bread I’m completely happy with with my sourdough starter, but King Arthur Flour’s recipe for discard pancakes is the bomb. My mom got us bacon lover’s subscriptions from Zingerman’s deli for Christmas and I have quite enjoyed that too. Cooked a whole package while I made pancakes.

I make scratch buttermilk pancakes, even mill my flour. Enough there for daughter, granddaughter, SIL, great grandson and my son and his fiancé and some left over for me. Made a total of 64 pancakes not counting the one my wife stole while I wasn’t looking.

Just another day in paradise.

My grandpa would've loved seeing this discussion. When I visited the farm, every morning we'd fry bacon in the iron skillet and make pancakes. Of course, he never wanted to waste anything, so bacon grease was poured onto his pancakes. I just couldn't do that, and ended up using homemade syrup. Good memories, and now I'm hungry Big Grin

The sourdough pancakes are buttermilk. You mix a cup of unfed starter, two cups of buttermilk and two cups of flour and two tablespoons of sugar and let it stand overnight on the counter for 8-12 hours. Next morning you add eggs, oil, salt and soda before cooking. Really good.

That sounds really good. I have not tried sourdough yet but it is on my list.
