I used Peter Reinhart's recipe from The Bread Baker's Apprentice book. He claims it's authentic NY. Tasty and just the right chew for me (apparently this is adjusted by the boiling time).

Rather than type it all out, this website has it pretty much verbatim.

I've not done bialys, but Chef John has an easy recipe that I've been meaning to try.

Great looking job. I wouldn't have the patience to make my own, as it takes a good amount of work but you did a great job and your bagels look better than the little place I get mine from.

This was only the second time. The first was a number of years ago and did not go well. I've since gotten much better at bread baking and since I've not found a recipe yet in Reinhart's book that I didn't like, I thought I'd give these a whirl. They're really not that difficult to make, though they do take awhile (overnight) to ferment.
