Jim, HEB sells miniblocks of Velveeta so you can experiment with small batches:
Yeah, I probably should have started with the miniblocks instead of the 55 gallon drum from Costco.
My son, the big eater, has been addicted to nacho cheese, Que Bueno, which I believe comes from Costco. I don’t recall that having the tomato and chiles.
Luckily, I have enough willpower to control the driving ambition that rages within me.

I’ve already had to go through rehab to be cured of Jimmy Dean sausage once.
One package of that crack, and I would be done!

I have a recipe for cheese dip that we make every now and then.
1 pound lean ground beef
1 good size onion chopped
1 red bell pepper chopped
1 or 2 jalapenos chopped
Brown all that up and once the beef is done and vegies are soft, add in a can of Rotel, a couple small cans of hatch green chilies (I prefer the hot ones), and a packet of spicy taco mix.
Once all that is combined I add a large jar of Tostitos queso, chopped cilantro, fresh lime juice, then cayenne pepper, chili powder, and black pepper to taste.
I have cobbled up almost exactly the same thing on the fly and it was very good.
The part that eludes me is how some restaurants manage to thin up the cheese and soften (or even lose) the basic Velveeta taste. I used milk, probably need to try half and half next. Maybe throw some cream cheese in the mix as well.
