FWIW, I read in one of the Texas websites that since restaurants are closed a lot of high end cuts of meat like ribeye are being ground up and made into ground beef for sale in stores. The problem is that Ribeye is 70-30 when ground up, so if you want some of this good ground beef, go with the higher fat content.

That's what my local butcher was doing back in late March, at the start of all this. He said nobody was buying steaks, but he couldn't keep enough ground beef on hand, so steaks became hamburger meat.

Unfortunately, he ended up going out of business a couple weeks ago. Sad to see the demise of a multi-generation neighborhood butcher shop, one of only 2 or 3 total in all of NWA.

I didn't look at ground beef, but a week ago at my local Costco, an entire PRIME boneless rib eye was $12.99 lb. Choice was $9.99 lb.

I think at Costco, you can grab any steak you want and they'll grind it for you. Not sure what Chuck steaks or Eye round were selling for as I didn't check the prices.

I picked up entire prime beef tenderloins this weekend at a local specialty store for $9.99lb.....it's one of their lost leaders every once in a while.

No salmon in the refrigerated area.
Beef Brisket was up to $6.59

The Ribeye steaks were $12.99 (no thanks), NY Strip was $14.99, and filet was $20.99. I didn't;t see anybody buy beef while we were there or checking out.

They had the Kirkland Bacon, but the price was $3.99/ lb ($9.99 for 2.5 lbs).

We went at 5:30 and the store was a virtual ghost town. We normally wait 10-15 minutes in line for check out, and were in and out with a $120 bill in less than 15 minutes. There may have been 40 people in the store, and I would guess 1 associate for every 1 customer.

As soon as I heard the meatpacking plants were shutting down, I stuffed my freezer. I was a little surprised how long it took for the shortages to actually hit. Now it's here.

Meat is always priced on Supply and demand. People seem to be eating more ground beef lately. Same reason Filet Mignon is always expensive, not because the demand is excessive, only because each entire cow has a small amount of it compared to ribeye or sirloin.

I haven't seen any shortages of any type of beef. Publix and Costco have had every cut of beef that you'd want, they're just pricing some cuts higher than others in order to steer some buyers from cuts that are in demand to ones with more supply/less demand.

I went to Costco a couple of weeks ago and they had zero beef of any kind. No ground, no steaks, no roasts. They didn't even have lamb. My local grocery stores almost always have some form of beef while individual cuts or some percentages of ground beef my be out. There is definitely a shortage here.

I don't know what is going on. I agree there has likely been a run on certain meat products, but I can not understand how or why they are changing so much, and some goes up and some go down wildly. Like Eye of Round - why is it 8.99 at Costco, and 6.99 at Harris Teeter and Sam's. Why would chuck roast go down in price, and ground hamburger go up? It feels like Costco's supplier have them over a barrel.

I don't feel like I can get a decent deal on meat from Costco anymore without doing a lot of comparison shopping.
