Open the Alexa app.
Open More and select Settings.
Select Account Settings.
Select Amazon Sidewalk.
Turn Amazon Sidewalk On or Off for your account.
edit: Not necessarily an opt-in or out, just an enable/disable option. Had to update my alexa app to do so.

Of all the apps installed on my iPad, and there are quite a few, only three have access to the mic, and they're language learning apps. On my phone only Signal Private Messenger has mic access.

I was in fact referring to Android devices. A couple of years back I decided to try a Samsung Galaxy. Several of the apps I downloaded required access to my microphone when they had no reason for access. I returned the phone and switched back to Apple. Apple is not that much better however. Apple developers have the ability to bypass safeguards. Apple trusts developers to do the right thing. In other words...do whatever unless you get caught. You CANNOT fully trust the privacy settings. Apple is also making it harder and harder to avoid using Siri.
Here are just a few examples. I could give you pages full of similar examples.
These tech companies are working together in a lot of cases.

I found it turned back on from an update.
I turned it off again in both the Alexa app and in the ring app.

I wasn't suggesting you thought Apple or iOS were perfect ensigmatic. The point of my post was to make people aware that privacy settings can't be trusted. I've been a developer for that past 15 years. I know what they are doing and it's not in the end users best interests. There is major coordination between these tech companies and good old Uncle Sam. The kind of things they are doing are unethical...if not illegal with a Government blessing.
