Interesting, he uses Chipotle pepper in Adobo sauce. Embasa brand Chipotle pepper in adobo is the secret ingredient in my chili. I'm gonna have to try it. Plus, it's Alton Brown, so it must be good.

Chipotle in Adobo is has a profile similar to some southern BBQ sauce but less sweet. (Texan)

This, instead of Catsup/Ketchup I use a good BBQ sauce, any brand you like, I prefer a sweet/hot to get some kick in the loaf.

Well, I made the mooseloaf for supper and it was delicious!
I chose to go simple and basic:
1/2 pound of ground moose (wife is on restricted diet so small loaf as I'd be the only one eating it) and I used the other half yesterday in a potato casserole.
1 egg.
A handful of crumbled saltine crackers.
A hefty dollop of yellow mustard.
A couple of tablespoons of finely diced onion.
A pinch of salt.
Mix packed firmly in a small glass baking dish, topped with about a quarter cup of ketchup with a tablespoon or so of brown sugar stirred in.
Baked in a 400° oven for about 35 minutes.
Leftovers will make a marvelous sammich for tomorrow's lunch.
Be careful when following the masses. Sometimes the M is silent.

three pounds ground beef one pound ground sausage (I like mild Italian) one package Bear Creek "Chaddar Broccoli" soup mix.
Mix the above and bake at 350 for 1.5 hours or smoke at temp 225-250 until internal temp of meat is 170.
I like to add two cans drained diced green chilies, extra cheese, olives, mushrooms, and sometimes fresh bell pepper and jalapeno peppers.
1.5lbs ground beef .5lbs ground pork four slices of toast crumbled up tiny one egg 1.5 cups milk two teaspoons of salt 1/4 teaspoon of pepper 1/4 teaspoon of dry mustard 1/8 teaspoon of sage mix thoroughly and place in a loaf pan top with catsup or leave bare depending on choice. bake at 350 degrees for 1.5 hours.
comes out moist and delicious every time.

Ooh, this one sounds yummy! Never had one with all those fixins! Not "traditional", but sounds great!

2 tbs oil saute: 1/2 C chopped onions 1/2 C carrots, chopped 1/2 C celery, chopped 2 cloves, crushed Then mix all together... 1 tsp thyme 3 lbs ground beef 1 C bread crumbs 2 LG eggs 1/3 cup Worcestershire 1/3 C Ketchup 2 Tbs Mustard 2 Tbs steak sauce 1 tsp each, salt and Pepper
1 hour 400 in water bath (meatloaf pan in a jelly roll sheet with water)
