I'm craving a good meatloaf, but the last one I made lacked flavor. If you have a go-to recipe please share it here. Thank you in advance.

old rugged crossBurger, salt, pepper some saltines and an egg or two depending on how much burger some sliced onion. Mix all together. A bit of Ketchup on top. Simple, easy and tasty. Like to cook until a bit of a crust on it.
Add any spices you desire. But as is, is a great meatloaf.

mkuefferHands down is Alton Brown’s meatloaf. There is science behind it. Getting a moist, but crusted loaf. You can also change up to add your taste.

SpeedbirdMy Mothers is hands down the best in the world.
I don't have the exact recipe, but key points are:
- Meatloaf mix: equal parts ground: beef, pork and veal
- metal baking pan greased with crisco
- pack it in the pan tight, as hard as you can push down with your hands

1 lb ground beef
1 egg
1 Tbsp catsup
1 tsp mustard
1 tsp worcestershire
add:
9" crushed ritz crackers (used to be a full tube, but the tubes have shrunk)
spices that you like - salt, pepper, Mrs Dash, etc
minced onions
form into loaf:
put deep channel down loaf
put more catsup, mozzerella cheese, and minced pepperoni into channel
bake at 400 degrees for 30 minutes. can start covered, but leave uncovered at least 15 minutes to brown the crust.
Goes well with baked potatos, since the oven's already in use.

similar to mine with some nice variations and additions. I am going to try it. Sounds delicious Whanson Wi.

357fuzzI don’t know what is called but make up a regular meatloaf and put in a pan. No ketchup or anything on top like that. Just the meatloaf part. Then cover in mash potatoes. Then slather some Campbell’s golden mushroom soup over the mash potatoes and then bake until done. My favorite. Enjoy.

I'm going to try a "mooseloaf" tonight, using ground moose vs. ground beef.
I made our favorite potato casserole with some last night and it was delicious! We've been using ground chicken as neither of us can tolerate the fat in beef anymore. Extra lean mitigates the side effects to a degree, but it's still unpleasant.
Be careful when following the masses. Sometimes the M is silent.

GustoferBeen making this one forever. I usually double it as it fits in my baking dish better and gives plenty of leftovers for sandwiches.
1# burger
1/4 cup breadcrumbs (Progresso type)
1 egg
1/4 cup milk
1/4 cup of minced onion
Handful of button mushrooms minced/diced
1T parsley (fresh or dried)
1/2t each of sage, thyme, salt, and pepper
2T barbecue sauce

pbslingerI don't use a recipe which is fraught with peril because of the delicate liquid balance needed. If its too dry the vegetables don't cook completely. I put grated carrot, chopped mushrooms, bell pepper, onions, garlic, cooked rice, crushed saltines, eggs, wooster, red wine, beef broth and tomato sauce. When I cook, I don't season for me, but for my wife. She likes it pretty much unseasoned as in you can't taste any herbs such as rosemary, thyme or basil. I wouldn't dare put any chili powder in. Her contention is that seasoning masks the flavor of everything else in it and in a way she's right.
I've lately made meat loafs using the one pound packs our organinc side of beef comes in, I think that amount of beef doesn't make for the best meat loaf, and maybe 1-1/2 pounds should be minimum.

Egg
Catsup
Mustard
Worcestershire sauce
Bread crumbs
A dash of brown sugar
Onion powder
Adjust ingredients to the size of the meatloaf and your individual taste .

eyrichMine is pretty plain, except I use tomato BBQ sauce instead of ketchup and I use 1# hamburger and 1# pork sausage
1 lb ground beef
1 lb pork sausage
1 cup rolled oats
1/4 cup dehydrated onions
1/2 cup BBQ sauce (tomato base, not vinegar)
2 tablespoons Worcestershire sauce
4 oz container of Egg Beaters (or 2 eggs)
glaze top with layer of BBQ sauce.

oddballSaute finely chopped onion and green bell pepper in olive oil for a few minutes, add 2 minced garlic cloves, stir for a couple of more minutes, then let cool. In a mixing bowl, mix 2 lbs of ground chuck, onion/pepper mixture, 2 large eggs, a couple of dashes of Worcestershire sauce, tablespoon of ketchup, 1 cup of bread crumbs, salt and pepper. Roll out into a firm loaf and cover with a glaze (1/3 cup ketchup/ 2 tbl brown sugar/ 2 tbl dijon mustard). Bake for 45-55 minutes in 375 degree oven.

Disliked meatloaf for a long time, as I only knew it with the slab of red across the top.
My wife makes a great loaf, no ketchup. Nice crust on the top & moist throughout.
If I can remember, I'll get her recipe & post it here.

I too was never a fan of the strip of dried out ketchup across the top. Just make it plain and serve it to me with lots of good brown gravy and mashed potatoes.
